"And I pay particular attention to sensible animal husbandry." From Mühlenstein to Mont Ventoux, from sheep's cheese from Rohmlich to unusual Pecorino - Michael Hericks has a large selection of the best cheese specialties.
The expert's tip: the longer the cheese has matured, i.e. the drier it is, the longer it will keep in the fridge when sliced. "Certainly two or three weeks longer than Gouda."
Michael Hericks has many regular customers in Lüdinghausen. With most of them, he doesn't even have to ask what they want. He goes straight for the right cheese.

Cibaria: Cibaria, the organic wholemeal bakery, brings bread and rolls, cakes and pastries to Lüdinghausen on Tuesdays and Fridays. Here, the focus is on using old varieties such as emmer or Khorasan wheat. "It's very important to us that the dough is left to rest for a long time. When wheat rests for 16 hours a day, it is also very digestible and, above all, tasty," explains employee Tjakien Kommer. "A taste explosion in the mouth." Chemical fermentation stabilizers, enzymes, genetically engineered and modified products as well as colourings and flavourings are absolutely taboo. The main grains all come from the Münsterland region or are purchased exclusively from Germany. Cibaria is involved in many social projects in the Münsterland region.
"Lüdinghausen is a great weekly market with incredibly nice customers," says Tjakien Kommer. "I really enjoy coming here."
